Henry of Pelham, Vidal Ice Wine

A very special dessert sweet wine, made from estate-grown grapes in the Short Hills Bench. Summer is warm and autumn is cool followed by a quick shift to winter’s cold; these are the perfect conditions for producing Icewine. When winter arrives the berries are typically harvested at night when they are frozen at -8 ºC whilst still on the vine. This gives ice wine its characteristic refreshing sweetness balanced by high acidity.
